Spread the mustard on each half of the croissant and layer with spring mix, tomatoes seasoned with salt and pepper, ham and cheese.
Preheat the oven to 375 degrees. Toss the pita with oil and season well with salt and pepper. Bake in the oven for about 10 minutes until golden brown. Set aside for 5 to 10 minutes to further crisp the pita before serving.
Cut in half and serve with pickles, pita and hummus.
