In a bowl mix all the ingredients for the sauce until well combined. Season with salt and pepper to taste.
Heat a grill or grill pan over medium heat. Grill the chicken on both sides to an internal temperature of 160°F (71°C) using a thermometer. Then remove from the heat and set aside to rest for 3 minutes. Then chop.
Layer the wrap with lettuce, tomatoes, onion, chicken, and sauce. Fold in the ends and roll up tight.
Cut in half and serve with chips, pickle, and fruit punch.
