Preheat the oven to 375°F.
Add tomatoes, feta, and garlic to a casserole dish. Drizzle olive oil over the top and season with salt and pepper. Place in the oven and cook until everything is softened, about 30 minutes.
In the meantime, in a pot of salted boiling water, cook the pasta according to the directions on the package. Drain well then set aside.
Preheat a grill or grill pan on medium heat. Season the chicken on both sides with salt and pepper. Lightly drizzle with oil. Grill on both sides until nicely charred to an internal temperature of 160 degrees using a thermometer. Set aside to rest. Cut into bitesized chunks right before serving.
Take the casserole dish out of the oven and immediately start to mash the tomatoes and cheese together using a whisk. Stir in the pasta until everything is incorporated. Taste and season with salt if needed.
Stir in the olives, basil and chicken, serve immediately with bread.
