Prepare the ingredients per the instructions above.
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
In another bowl, mix together the sour cream, melted butter, egg, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Mix the ingredients for the topping and distribute over the muffins.
Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
While the muffins are baking, divide the Greek yogurt evenly into two bowls.
Wash the mixed berries and pat them dry.
Top the Greek yogurt with granola and mixed berries.
Drizzle honey over the yogurt bowls.
Pour orange juice into glasses.
Once the muffins are cooled, serve them alongside the Greek yogurt bowls and orange juice.
