Ingredients

Sour Cream Muffins

  • Nonstick spray
  • 1 cup All-purpose flour
  • ½ cup Granulated sugar
  • ½ tsp Baking soda
  • ¼ tsp Salt
  • ½ cup Sour cream
  • ¼ cup Unsalted butter melted
  • 1 Egg
  • ½ tsp Vanilla extract

Topping

  • 2 TBSP Butter melted
  • ¼ cup All-purpose flour
  • ½ tsp Cinnamon
  • 1 TBSP Brown Sugar

Greek Yogurt Bowl

  • 1 cup Greek yogurt
  • ½ cup Granola
  • ½ cup Mixed berries (such as strawberries, blueberries, raspberries)
  • 1 TBSP Honey

Orange Juice

  • 16 oz Orange juice

Instructions

  • Prepare the ingredients per the instructions above.
  • Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
  • In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
  • In another bowl, mix together the sour cream, melted butter, egg, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Mix the ingredients for the topping and distribute over the muffins.
  • Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  • While the muffins are baking, divide the Greek yogurt evenly into two bowls.
  • Wash the mixed berries and pat them dry.
  • Top the Greek yogurt with granola and mixed berries.
  • Drizzle honey over the yogurt bowls.
  • Pour orange juice into glasses.
  • Once the muffins are cooled, serve them alongside the Greek yogurt bowls and orange juice.
