Ingredients
Sour Cream Muffins
- Nonstick spray
- 1 cup All-purpose flour
- ½ cup Granulated sugar
- ½ tsp Baking soda
- ¼ tsp Salt
- ½ cup Sour cream
- ¼ cup Unsalted butter melted
- 1 Egg
- ½ tsp Vanilla extract
Topping
- 2 TBSP Butter melted
- ¼ cup All-purpose flour
- ½ tsp Cinnamon
- 1 TBSP Brown Sugar
Greek Yogurt Bowl
- 1 cup Greek yogurt
- ½ cup Granola
- ½ cup Mixed berries (such as strawberries, blueberries, raspberries)
- 1 TBSP Honey
Orange Juice
- 16 oz Orange juice
Instructions
- Prepare the ingredients per the instructions above.
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
- In another bowl, mix together the sour cream, melted butter, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Mix the ingredients for the topping and distribute over the muffins.
- Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- While the muffins are baking, divide the Greek yogurt evenly into two bowls.
- Wash the mixed berries and pat them dry.
- Top the Greek yogurt with granola and mixed berries.
- Drizzle honey over the yogurt bowls.
- Pour orange juice into glasses.
- Once the muffins are cooled, serve them alongside the Greek yogurt bowls and orange juice.
