Wash and cut the fruit as needed.
In a shallow dish, whisk together eggs, milk, ground cinnamon, and vanilla extract until well combined.
Dip each slice of bread into the egg mixture, ensuring both sides are well coated but not overly soaked. Allow excess egg mixture to drip off of the bread slices.
Heat a large skillet or griddle over medium heat and add a small amount of butter or oil.
Place the soaked bread slices onto the skillet or griddle and cook for 2 - 3 minutes on each side, or until golden brown and cooked through. Repeat with remaining slices.
Divide the cooked French toast slices between two plates.
Top with fresh fruit of your choice.
Drizzle the French toast with maple syrup according to taste.
Serve with a glass of milk on the side. Enjoy immediately!
