Prep the ingredients per the instructions above.
Preheat oven to 400°F (204°C). Spray a baking sheet with non-stick spray.
Place potatoes in a mound in the center of a baking sheet. Drizzle with olive oil. Sprinkle potatoes with paprika, garlic powder, onion powder, salt, and pepper. Toss well to evenly coat in oil and spices. Spread potatoes evenly into a single layer. Bake for 15 minutes. Then toss and continue to bake until just tender, about 15 minutes longer.
Preheat the broiler. Broil the potatoes for about 2 - 3 minutes until slightly browned. Then toss and continue to broil until golden brown and crisp on opposite, sides a minute or two longer.
For the sausage: Cook in the oven to an internal temperature of 160°F (71°C) using a thermometer.
Brew and prepare the coffee to your liking.
Melt the butter in a nonstick pan over medium heat. Crack the eggs into the pan and cook until the whites are firm. Season with salt and pepper to taste.
Toast the bread then spread them with butter and jam.
Serve the eggs with sausage, breakfast potatoes, toast, and coffee.
