Eggplant Toast

- 2 tbsp Feta cheese shaved
- 1/4 cup Fire roasted tomatoes quartered
- 1/4 tsp Fresh sage chopped
- 1/4 Baguette halved and cut into 5 inch long pieces
- 2 tbsp Extra-virgin olive oil
- 8 slices Eggplant about 1/4 inch thick
Mix the cheese, tomatoes, and sage in a bowl.
Heat a grill or grill pan on medium heat. Drizzle the baguette with oil. Drizzle the eggplant with oil and season with salt and pepper on both sides.
Grill the baguette until golden brown, then remove from the heat. Grill the eggplant on both sides until nicely marked and tender.
Layer the eggplant on the baguette, top with the tomato mixture, drizzle with oil and season with fresh cracked pepper.
