Eggplant Toast

Ingredients

  • 2 tbsp Feta cheese shaved
  • 1/4 cup Fire roasted tomatoes quartered
  • 1/4 tsp Fresh sage chopped
  • 1/4 Baguette halved and cut into 5 inch long pieces
  • 2 tbsp Extra-virgin olive oil
  • 8 slices Eggplant about 1/4 inch thick

Instructions

  • Mix the cheese, tomatoes, and sage in a bowl.
  • Heat a grill or grill pan on medium heat. Drizzle the baguette with oil. Drizzle the eggplant with oil and season with salt and pepper on both sides.
  • Grill the baguette until golden brown, then remove from the heat. Grill the eggplant on both sides until nicely marked and tender.
  • Layer the eggplant on the baguette, top with the tomato mixture, drizzle with oil and season with fresh cracked pepper.
