Preheat the oven to 350°F (175°C)..
In a skillet, melt butter over medium heat.
Crack the eggs into the skillet, season with salt and pepper, and scramble until just set.
Place the croissants in the preheated oven for 3-5 minutes or until warm.
Slice the croissants in half.
On the bottom half, layer each croissant with a slice of ham or bacon, scrambled eggs, and a slice of cheese.
Place the assembled croissants back in the oven for 2-3 minutes to melt the cheese.
While the sandwiches are in the oven, arrange fresh fruit on a serving plate.
Brew your favorite coffee using your preferred method. Add sweetener and creamer if desired.
Remove the croissant breakfast sandwiches from the oven.
Place each sandwich on a plate alongside the fresh fruit.
Serve with a cup of hot brewed coffee.
