Couscous Stir Fry Bowl

Ingredients

  • 1/2 cup Chicken broth
  • 1/2 cup Couscous
  • 2 tbsp Extra-virgin olive oil
  • 2 tbsp Red onion shaved
  • 2 cloves Garlic sliced
  • 2 cups Tuscan Kale
  • 1 cup Fire roasted tomatoes halved
  • 1/4 cup Assorted olives halved
  • 2 oz Deli turkey breast chopped
  • 2 tsp Parmesan cheese grated
  • 2 slices Crusty bread toasted

Instructions

  • Bring the broth to a boil. Cook the couscous in the broth according to the instructions on the package. Once cooked, stir in half the oil and season with salt and pepper to taste.
  • Heat a saute pan over medium heat. Once hot, add the remaining oil. Saute the onion and garlic until softened. Add in the kale and continue to saute until the kale is wilted and the onion and garlic are golden brown.
  • Stir in the tomatoes, olives, turkey. Season with salt and pepper. Remove from the heat and stir in the couscous.
  • Garnish with parmesan. Serve with bread.
