Toast each slice of bread to your desired level of crispness. Evenly spread ¼ cup of cottage cheese over each slice of toast.
For the Tomato and Onion Toast: Evenly distribute the chopped onion and diced tomato over the cottage cheese. Drizzle with extra-virgin olive oil. Sprinkle with salt, black pepper, and dried oregano to taste.
For the Lox Toast: Place chopped lox on top of the cottage cheese. Top with chopped red onion and fresh dill. Season with salt and black pepper to taste.
Serve: Plate the toast and serve with chilled white grape juice. Enjoy!
