Assemble sandwich: Spread fig jam onto one side of each slice of bread evenly. Layer with cheese, pear slices, arugula, and chorizo. Top with remaining slice of bread. Butter the outside of the sandwich.
Heat the panini press or pan over medium heat.
Place sandwiches in the panini press and heat until the outside is crisp and the cheese is melted.
Mix the sparkling water and lemon.
Serve the panini with carrots and ranch, and lemon sparkling water over ice if desired.
