Optional: place a glass or mug in the freezer.
Prep the ingredients per the instructions above.
Heat a large pot over medium heat. Once hot, add the oil and saute the onions, peppers, and garlic until softened. Add the beef, along with the measured-out chili powder, cumin, and paprika. Brown the ground beef while breaking it up into smaller pieces with a spatula.
Stir in chicken broth and crushed tomato. Season with salt and pepper. Cover with a lid and simmer until you are ready to serve. While the chili is cooking make the French fries.
Cook the fries according to the instructions on the package for baking or frying.
To finish the chili: Taste the chili and adjust the seasoning with salt and pepper or additional spices if needed.
Preheat the oven broiler on low.
Place the fries on a foil-lined baking sheet. Top with chili and cheese. Place under the broiler until melted.
To serve: Portion and garnish with scallions and jalapeño (if using). Serve with ranch or sour cream (if using) and soda in a frosted glass or mug if desired.
