Prep the chicken: Season the chicken with cumin, chili powder, paprika, salt, and pepper. Drizzle with oil and mix well.
Prep all taco ingredients per the instructions above.
Make the guacamole: Prep the ingredients per the instructions above. Slice the avocados in half, remove the pit and skin, then place in a mixing bowl. Mash the avocado with a fork. Add the remaining ingredients (except the chips) and stir them together. Season with salt and pepper to taste. Cover and transfer to the fridge until you are ready to serve.
Heat a skillet over medium heat. Saute the chicken until nicely browned and cooked through.
Warm the taco shells per instructions on the package.
Mix all the ingredients for the margarita. Add honey and lime juice to taste. Serve over ice if desired.
Assemble the tacos: Fill the taco shells with chicken, lettuce, tomatoes, and cheese. Garnish with cilantro.
