Ingredients
Tacos
- 10 oz Chicken breast boneless skinless diced into small pieces
- 1 tsp Ground cumin
- 1 tsp Chili powder
- 1 tsp Paprika
- Salt to taste
- Black pepper to taste
- 1/2 TBSP Extra-virgin olive oil
- 6 Taco Shells
- 1/2 cup Romaine lettuce shredded
- 1/3 cup Grape tomatoes chopped
- 1/2 cup Mexican cheese blend
- Fresh cilantro garnish
- 4 TBSP Sour cream optional
Guacamole and Chips
- 1.5 Avocados ripe
- 1/4 cup Onion minced
- 1/4 cup Tomato diced small
- 1 tsp Fresh cilantro chopped
- 2 TBSP Jalapeño pepper minced (optional)
- 2 cloves Garlic minced
- 1/2 Lime juiced
- 1/4 tsp Kosher salt
- Black pepper to taste
- 2 oz Tortilla chips
Margarita
- 1 TBSP Honey
- 8 oz Lemon Lime Sparkling Water
- 8 oz Orange juice
- 1/4 cup Lime juice to taste
Instructions
- Prep the chicken: Season the chicken with cumin, chili powder, paprika, salt, and pepper. Drizzle with oil and mix well.
- Prep all taco ingredients per the instructions above.
- Make the guacamole: Prep the ingredients per the instructions above. Slice the avocados in half, remove the pit and skin, then place in a mixing bowl. Mash the avocado with a fork. Add the remaining ingredients (except the chips) and stir them together. Season with salt and pepper to taste. Cover and transfer to the fridge until you are ready to serve.
- Heat a skillet over medium heat. Saute the chicken until nicely browned and cooked through.
- Warm the taco shells per instructions on the package.
- Mix all the ingredients for the margarita. Add honey and lime juice to taste. Serve over ice if desired.
- Assemble the tacos: Fill the taco shells with chicken, lettuce, tomatoes, and cheese. Garnish with cilantro.
- Serve: Enjoy the tacos with sour cream, chips and guacamole, and margarita.
