Ingredients

Tacos

  • 10 oz Chicken breast boneless skinless diced into small pieces
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • Salt to taste
  • Black pepper to taste
  • 1/2 TBSP Extra-virgin olive oil
  • 6 Taco Shells
  • 1/2 cup Romaine lettuce shredded
  • 1/3 cup Grape tomatoes chopped
  • 1/2 cup Mexican cheese blend
  • Fresh cilantro garnish
  • 4 TBSP Sour cream optional

Guacamole and Chips

  • 1.5 Avocados ripe
  • 1/4 cup Onion minced
  • 1/4 cup Tomato diced small
  • 1 tsp Fresh cilantro chopped
  • 2 TBSP Jalapeño pepper minced (optional)
  • 2 cloves Garlic minced
  • 1/2 Lime juiced
  • 1/4 tsp Kosher salt
  • Black pepper to taste
  • 2 oz Tortilla chips

Margarita

  • 1 TBSP Honey
  • 8 oz Lemon Lime Sparkling Water
  • 8 oz Orange juice
  • 1/4 cup Lime juice to taste

Instructions

  • Prep the chicken: Season the chicken with cumin, chili powder, paprika, salt, and pepper. Drizzle with oil and mix well.
  • Prep all taco ingredients per the instructions above.
  • Make the guacamole: Prep the ingredients per the instructions above. Slice the avocados in half, remove the pit and skin, then place in a mixing bowl. Mash the avocado with a fork. Add the remaining ingredients (except the chips) and stir them together. Season with salt and pepper to taste. Cover and transfer to the fridge until you are ready to serve.
  • Heat a skillet over medium heat. Saute the chicken until nicely browned and cooked through.
  • Warm the taco shells per instructions on the package.
  • Mix all the ingredients for the margarita. Add honey and lime juice to taste. Serve over ice if desired.
  • Assemble the tacos: Fill the taco shells with chicken, lettuce, tomatoes, and cheese. Garnish with cilantro.
  • Serve: Enjoy the tacos with sour cream, chips and guacamole, and margarita.
