In a small bowl, combine the ground cumin, chili powder, paprika, garlic powder, salt, and pepper. Rub the spice mixture with the chicken.
In a large skillet, heat the vegetable oil over medium heat. Add the chicken and saute to an internal temperature of 160°F (71°C). Set aside.
Prepare the guacamole: Cut the avocados in half and remove the pits. Scoop the flesh into a bowl and mash with a fork until desired consistency. Add the diced tomato, red onion, lime juice, chopped cilantro, salt, and pepper. Mix well.
Mix the honey, sparkling water, orange juice, and lime juice for the margarita mocktails. Make sure to dissolve the honey by stirring vigorously. Serve over ice if desired and with a garnish of lime wedges.
Warm the taco shells in a pan over medium heat for about 30 seconds on each side.
Layer the tacos shells with chicken, onions, lettuce, cheese, and tomato.
Serve with chips and guac and margarita mocktail.
