In a nonstick pan, heat the oil over medium heat. Add the onions and peppers and saute until soft, about 2 - 3 minutes. Add in the chicken sausage and cook for 1 minute.
Add the eggs and tomato to the pan. Cook, without stirring, until egg mixture begins to set, approximately 1 minute.
Using a heat-resistant spatula, gently lift corner of egg; tilt pan to allow uncooked egg to flow underneath. Cook until set. Repeat procedure until remaining egg is cooked.
Add the cheese and fold in half. Cook for 2 -3 minutes until the cheese is melted.
Lightly toast the bread to a golden brown but still somewhat soft.
Portion the eggs onto the bread, drizzle with hot sauce if desired. Cut in half and serve with pineapple.
