Ingredients
- 2 tbsp Extra-virgin olive oil
- 3 tbsp Onion diced
- 4 tbsp Green bell pepper seeded and diced
- 6 oz Chicken sausage links diced
- 8 Eggs scrambled
- 3 tbsp Tomato diced
- 4 oz Fresh mozzarella sliced
- 8 slices Multigrain bread lightly toasted
- 4 tsp Hot sauce optional
- 2 cups Pineapple sliced
Instructions
- In a nonstick pan, heat the oil over medium heat. Add the onions and peppers and saute until soft, about 2 - 3 minutes. Add in the chicken sausage and cook for 1 minute.
- Add the eggs and tomato to the pan. Cook, without stirring, until egg mixture begins to set, approximately 1 minute.
- Using a heat-resistant spatula, gently lift corner of egg; tilt pan to allow uncooked egg to flow underneath. Cook until set. Repeat procedure until remaining egg is cooked.
- Add the cheese and fold in half. Cook for 2 -3 minutes until the cheese is melted.
- Lightly toast the bread to a golden brown but still somewhat soft.
- Portion the eggs onto the bread, drizzle with hot sauce if desired. Cut in half and serve with pineapple.
