Chicken Sausage and Cheese Scrambled Eggs

Ingredients

  • 9 oz Chicken sausage links diced
  • 8 Eggs
  • 4 oz Cheddar cheese shredded
  • 1 tbsp Extra-virgin olive oil
  • 2 pears ripe sliced
  • 2 cups cottage cheese

Instructions

  • Preheat a non-stick pan over medium-high heat with oil and saute diced chicken sausage for 1 minute.
  • Pour scrambled eggs into the skillet, season with salt and pepper. Mix in the cheddar cheese and move the eggs around the pan with a rubber spatula until the eggs are cooked and no longer runny. Serve with sliced pear and cottage cheese on the side.
