Prep all ingredients per the instructions above.
Cook the rice according to package instructions and keep warm. Season with salt and pepper to taste.
Cook the Chicken: In a skillet, heat the olive oil over medium-high heat. Season the chicken breasts with chili powder, cumin, garlic powder, salt, and pepper. Cook the chicken to an internal temperature of 160℉ (71℃), until nicely browned. Remove from the skillet and set aside.
Make the Guacamole: In a bowl, mash the avocados with a fork. Add diced red onion, chopped cilantro, minced jalapeño (if using), lime juice, salt, and pepper. Mix well to combine.
Assemble Burritos: Lay out the flour tortillas. In the center of each tortilla, add cooked rice, chicken, shredded lettuce, diced tomatoes, shredded cheddar cheese.
Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito.
Make the Sparkling Lime Water: In two tall glasses, add a few ice cubes and a couple of lime slices to each glass. Pour sparkling water into each glass and stir gently.
Serve the burrito with salsa and/or sour cream, chips and guacamole, and lime sparkling water.
