Ingredients

Chicken and Rice Burrito:

  • 1/3 cup White rice rinsed
  • 1 TBSP Extra-virgin olive oil
  • 8 oz Chicken breast boneless skinless diced
  • 1 tsp Chili powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 2 large Flour tortillas
  • 1 cup Romaine lettuce shredded
  • 1/2 cup Tomatoes diced
  • 1/2 cup Cheddar cheese shredded
  • Sour cream for serving (optional)
  • Salsa for serving (optional)

Seasoning

  • Salt
  • Black pepper

Chips and Guacamole:

  • 2 Avocados ripe
  • 1/4 cup Red onion diced
  • 1/4 cup Fresh cilantro chopped
  • 1 Jalapeño pepper seeded and minced (optional)
  • 1 Lime juiced
  • 4 oz Tortilla chips

Lime Sparkling Water:

  • Ice cubes (optional)
  • 2 Lime sliced
  • 24 oz Sparkling water

Instructions

  • Prep all ingredients per the instructions above.
  • Cook the rice according to package instructions and keep warm. Season with salt and pepper to taste.
  • Cook the Chicken: In a skillet, heat the olive oil over medium-high heat. Season the chicken breasts with chili powder, cumin, garlic powder, salt, and pepper. Cook the chicken to an internal temperature of 160℉ (71℃), until nicely browned. Remove from the skillet and set aside.
  • Make the Guacamole: In a bowl, mash the avocados with a fork. Add diced red onion, chopped cilantro, minced jalapeño (if using), lime juice, salt, and pepper. Mix well to combine.
  • Assemble Burritos: Lay out the flour tortillas. In the center of each tortilla, add cooked rice, chicken, shredded lettuce, diced tomatoes, shredded cheddar cheese.
  • Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito.
  • Make the Sparkling Lime Water: In two tall glasses, add a few ice cubes and a couple of lime slices to each glass. Pour sparkling water into each glass and stir gently.
  • Serve the burrito with salsa and/or sour cream, chips and guacamole, and lime sparkling water.
