In a bowl whisk the oil, red curry, tomato paste, garlic powder, and lemon juice. Season with salt and pepper. Taste and adjust any of the ingredients as needed. (Add more red curry for more spice or more tomato paste to reduce the spice).
Mix the chicken in the marinade and set aside for 20 minutes.
Preheat a grill or grill pan on medium heat.
Thread the chicken onto the wooden skewers.
Grill the skewers on both sides until nicely charred to an internal temperature of 160 degrees using a thermometer.
For the sauce: Add all ingredients to a blender or food processor. Blend until smooth. Season with salt and pepper.
Drizzle with sauce. Serve with bread. Garnish with cilantro.(Be careful not to oversauce)
