Prepare the Avocado Spread: Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash the avocado with a fork until smooth. Mix in the lemon and mayo until fully combined. Season with salt and black pepper to taste. Set aside.
Make the kale: Place the torn kale leaves in a bowl with Extra virgin olive oil. Using your hands, gently massage the kale leaves for about 2 minutes until they become tender and wilted.
Toast the bread.
Assemble the Sandwiches: Lay out the slices of whole wheat bread. Spread the avocado mixture evenly on half of the bread slices. Layer with kale, deli chicken, and cheese. Place the remaining slices of bread on top of each sandwich to complete them. Cut in half.
Serve sandwich with sliced apple, nut butter, and grape juice.
