1lbChicken breast boneless skinlessdiced into bite sized pieces
12ozbroccoli floretscut into bite sized pieces
4ouncesCheddar cheeseshredded
1/2cupheavy cream
½tbspbutter
1tbspExtra-virgin olive oil
1cupPanko breadcrumbs
4dinner rolls
Instructions
Rinse rice under cold water and drain well.
Preheat the oven to 400 degrees. In an appropriately sized baking dish mix the chicken, broccoli, broth, heavy cream, butter, cheese, rice and a pinch of salt and pepper. Stir to distribute the ingredients evenly within the baking dish. Cover with foil and bake for 30 minutes.
Remove the foil. Mix olive oil and panko breadcrumbs in a bowl and spread over top. Bake uncovered for another 5 - 10 minutes or until breadcrumbs are golden brown. Serve with dinner rolls.
