Chicken Broccoli Casserole

Ingredients

  • 1 cup chicken broth
  • 1/2 cup Brown rice
  • 1 lb Chicken breast boneless skinless diced into bite sized pieces
  • 12 oz broccoli florets cut into bite sized pieces
  • 4 ounces Cheddar cheese shredded
  • 1/2 cup heavy cream
  • ½ tbsp butter
  • 1 tbsp Extra-virgin olive oil
  • 1 cup Panko breadcrumbs
  • 4 dinner rolls

Instructions

  • Rinse rice under cold water and drain well.
  • Preheat the oven to 400 degrees. In an appropriately sized baking dish mix the chicken, broccoli, broth, heavy cream, butter, cheese, rice and a pinch of salt and pepper. Stir to distribute the ingredients evenly within the baking dish. Cover with foil and bake for 30 minutes.
  • Remove the foil. Mix olive oil and panko breadcrumbs in a bowl and spread over top. Bake uncovered for another 5 - 10 minutes or until breadcrumbs are golden brown. Serve with dinner rolls.
