Chicken and Broccoli

Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 lb Chicken breast boneless skinless cut into thin strips
  • 2 cloves Garlic minced
  • 2 tbsp Fresh ginger minced
  • 1.5 cups Chicken broth
  • 1/4 cup Reduced-sodium soy sauce
  • 1 head Broccoli cut into florets
  • 1 - 2 tbsp Cornstarch dissolved completely in an equal amount of water to cornstarch ratio
  • 1/2 Carrot shaved
  • 1 Scallions chopped for garnish

Instructions

  • In a nonstick pan over medium-high heat, heat the oil. Add the chicken, garlic, and ginger; saute until the chicken starts to become golden brown.
  • Add the broth, soy sauce, and broccoli; bring to a simmer. Simmer until the broccoli is tender, about 5 - 7 minutes.
  • Dissolve the cornstarch in water and slowly stir it into the pan to thicken up the liquid. Adjust the seasoning with salt and pepper to taste.
  • Garnish with shaved carrots and scallions before serving.
