Instructions
In a nonstick pan over medium-high heat, heat the oil. Add the chicken, garlic, and ginger; saute until the chicken starts to become golden brown.
Add the broth, soy sauce, and broccoli; bring to a simmer. Simmer until the broccoli is tender, about 5 - 7 minutes.
Dissolve the cornstarch in water and slowly stir it into the pan to thicken up the liquid. Adjust the seasoning with salt and pepper to taste.
Garnish with shaved carrots and scallions before serving.
