Ingredients
- 2 tbsp Extra-virgin olive oil
- 1 lb Chicken breast boneless skinless cut into thin strips
- 2 cloves Garlic minced
- 2 tbsp Fresh ginger minced
- 1.5 cups Chicken broth
- 1/4 cup Reduced-sodium soy sauce
- 1 head Broccoli cut into florets
- 1 - 2 tbsp Cornstarch dissolved completely in an equal amount of water to cornstarch ratio
- 1/2 Carrot shaved
- 1 Scallions chopped for garnish
Instructions
- In a nonstick pan over medium-high heat, heat the oil. Add the chicken, garlic, and ginger; saute until the chicken starts to become golden brown.
- Add the broth, soy sauce, and broccoli; bring to a simmer. Simmer until the broccoli is tender, about 5 - 7 minutes.
- Dissolve the cornstarch in water and slowly stir it into the pan to thicken up the liquid. Adjust the seasoning with salt and pepper to taste.
- Garnish with shaved carrots and scallions before serving.
