In a skillet over medium heat, cook the sausage patty until browned and fully cooked to an internal temperature of 155F / 68C. Turn occasionally to ensure even cooking. Once cooked, remove the sausages from the skillet.
Melt the butter in a nonstick pan over medium heat. Crack the eggs into the pan and cook until the whites are firm. Then flip over and top with cheese. Cook until melted.
Brew and prepare the coffee to your liking.
Portion the eggs and sausage.
Fold in the sides and then roll them up tightly. Cut in half.
