Prep the ingredients per the instructions above.
Heat the oil in a skillet over medium heat, sauté diced potatoes until golden brown and cooked through. Add the sausage to the skillet and brown well.
Whisk eggs in a separate bowl, adding half-and-half, salt, and black pepper.
Mix the cooked sausage and potatoes in the skillet.
Push the ingredients to one side of the skillet, add butter to the empty side, letting it melt.
Pour the whisked eggs into the skillet with the melted butter.
Just as the eggs begin to set, drop spoonfuls of cream cheese over the eggs. Scramble the eggs until just set, but still moist.
Warm the tortillas in the skillet or microwave.
Spoon the sausage, potato, and scrambled eggs onto each tortilla.
Sprinkle shredded cheese on top.
Fold in the sides of each tortilla, then roll up tightly to form a burrito.
Place the burrito seam side down on a plate.
Serve with a glass of fresh orange juice.
