Ingredients

Sausage, Potato, Cream Cheese and Egg Breakfast Burrito

  • 2 cups Potatoes diced small
  • 8 oz Breakfast sausage links chopped
  • 4 Eggs
  • 1/4 cup Half and Half
  • Salt to taste
  • Black pepper to taste
  • 2 TBSP Butter
  • 4 oz Cream cheese
  • 2 Tortilla wraps
  • 1 cup Cheddar cheese shredded

Orange Juice

  • 16 oz Orange juice cold

Instructions

  • Prep the ingredients per the instructions above.
  • Heat the oil in a skillet over medium heat, sauté diced potatoes until golden brown and cooked through. Add the sausage to the skillet and brown well.
  • Whisk eggs in a separate bowl, adding half-and-half, salt, and black pepper.
  • Mix the cooked sausage and potatoes in the skillet.
  • Push the ingredients to one side of the skillet, add butter to the empty side, letting it melt.
  • Pour the whisked eggs into the skillet with the melted butter.
  • Just as the eggs begin to set, drop spoonfuls of cream cheese over the eggs. Scramble the eggs until just set, but still moist.
  • Warm the tortillas in the skillet or microwave.
  • Spoon the sausage, potato, and scrambled eggs onto each tortilla.
  • Sprinkle shredded cheese on top.
  • Fold in the sides of each tortilla, then roll up tightly to form a burrito.
  • Place the burrito seam side down on a plate.
  • Serve with a glass of fresh orange juice.
