Ingredients
Sausage, Potato, Cream Cheese and Egg Breakfast Burrito
- 2 cups Potatoes diced small
- 8 oz Breakfast sausage links chopped
- 4 Eggs
- 1/4 cup Half and Half
- Salt to taste
- Black pepper to taste
- 2 TBSP Butter
- 4 oz Cream cheese
- 2 Tortilla wraps
- 1 cup Cheddar cheese shredded
Orange Juice
- 16 oz Orange juice cold
Instructions
- Prep the ingredients per the instructions above.
- Heat the oil in a skillet over medium heat, sauté diced potatoes until golden brown and cooked through. Add the sausage to the skillet and brown well.
- Whisk eggs in a separate bowl, adding half-and-half, salt, and black pepper.
- Mix the cooked sausage and potatoes in the skillet.
- Push the ingredients to one side of the skillet, add butter to the empty side, letting it melt.
- Pour the whisked eggs into the skillet with the melted butter.
- Just as the eggs begin to set, drop spoonfuls of cream cheese over the eggs. Scramble the eggs until just set, but still moist.
- Warm the tortillas in the skillet or microwave.
- Spoon the sausage, potato, and scrambled eggs onto each tortilla.
- Sprinkle shredded cheese on top.
- Fold in the sides of each tortilla, then roll up tightly to form a burrito.
- Place the burrito seam side down on a plate.
- Serve with a glass of fresh orange juice.
