Brew the coffee then refrigerate.
Prep the ingredients per the instructions above.
Mix the fruit in a bowl.
Heat half the oil in a non-stick pan over medium-low heat. Cook the ham on both sides until it is nicely browned.
Heat the remaining oil in a nonstick pan over medium heat. Crack the eggs into the pan and cook until they start to set. Flip the eggs over to cook to your liking. Add the cheese on top to melt. (Your choice to cook longer for a more solid yolk or less for a more runny yolk.) Season with salt and pepper.
Lightly toast the bagel.
Place the ham on the bagel and top with eggs.
In a jar with a lid, pour milk and shake vigorously back and forth for a minute, until foamy. Take off the lid, and microwave it for 15 seconds.
Fill two large glasses with ice. Pour coffee evenly between the glasses. Sprinkle a little sugar in each glass. Using a spoon, hold back the foam and pour a little milk into each glass. Then take spoonfuls of the foam to add on top of the latte.
Cut in half and serve with fruit and latte.
