Bocadillo Atun

Bocadillo de Atún
- 8 oz Tuna fish drained
- 2 TBSP Mayonnaise
- 1 tsp Dijon mustard
- 1/4 cup Assorted olives pitted and sliced
- 1 TBSP Fresh parsley chopped
- Salt to taste
- Black pepper to taste
- 2 Sub rolls cut 3/4 of the way thru (or 6-inch pieces of baguette)
- 1/2 Red onion thinly sliced
- 1 Tomato sliced
- 1/2 cup Romaine lettuce shredded
- 2 oz Potato chips
- 2 Pickle spears
Homemade Lemonade
- 1 cup Lemon juice fresh squeezed
- 16 oz Water
- 2 TBSP Sugar use to taste
- Ice cubes
Prep the ingredients as instructed above.
In a bowl, combine the drained tuna, mayonnaise, Dijon mustard, chopped olives, chopped parsley, salt, and black pepper. Mix well.
Spread the tuna mixture evenly each roll. Top the tuna mixture with red onion, tomato, and lettuce.
Mix all of the ingredients for the homemade lemonade. Serve over ice if desired.
Serve: Slice the bocadillo in half and enjoy your delicious bocadillo de atún with chips, pickle, and homemade lemonade.
