Preheat the oven to 375 degrees. Season the top side of the mahi mahi with cajun seasoning and salt.
Mix together the tomatoes, onion, garlic, lime juice, honey, and cilantro. Season with salt and pepper to taste. Adjust the lime juice or honey as needed (its better to add a little at a time to taste than all at once). Then set aside.
Heat an oven safe saute pan over medium heat. Once hot, add the oil. Place the mahi into the pan seasoned side down. Cook, undisturbed, for 2 to 3 minutes, until deep golden brown. Then flip over. Place the pan into the oven and cook to an internal temperature of 145 degrees using a thermometer.
Once done, set on a cutting board to rest for 2 to 3 minutes.
Spoon the tomato chutney over the mahi. Serve with bread.
