Prepare ingredients per the instructions above.
Preheat your waffle iron according to the manufacturer's instructions.
In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, combine milk, melted butter, egg, and vanilla extract. Mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Lightly grease the waffle iron with non-stick spray.
Pour enough batter onto the preheated waffle iron to cover the waffle grid, following the manufacturer's instructions.
Close the waffle iron and cook until the waffles are golden brown and crisp, typically 3-5 minutes depending on your waffle iron.
While the waffles are cooking, prepare the fruit by washing, slicing, and arranging it on a plate.
Pour the whipping cream into a small bowl and whip the cream using a hand mixer until it begins to thicken, add the confectioners sugar and vanilla extract, and continue whipping until stiff peaks form.
Brew and prepare the coffee to your liking.
Once the waffles are cooked, carefully remove them from the waffle iron and place them on serving plates.
Top each waffle with a generous dollop of whipped cream and arrange the prepared fruit on top. Optionally, drizzle with maple syrup for added sweetness.
Serve the waffles with freshly brewed coffee on the side.
