Prep all ingredients per the instructions above.
Mojito: Stir together all ingredients until well combined. Refrigerate until ready to serve to allow the flavors to build. Taste and adjust the lime or honey as needed.
Make the salsa: Prep salsa ingredients per the instructions above. Place all the ingredients (except the tortilla chips) in a food processor or blender and pulse until smooth. Season with salt and pepper to taste. Reserve in the fridge until you are ready to serve.
Heat a large non-stick skillet over medium heat. Once hot, add the ground beef and taco seasoning, breaking up the beef with a wooden spoon. Cook until no longer pink. Taste and add more seasoning or salt as needed.
Evenly distribute the beef onto the taco shells, and top with cheese, lettuce, avocado, and tomato. Fold in half.
Serve the tacos with sour cream and hot sauce (if using), chips and salsa, and mojito.
