Ingredients
Mojito
- 24 oz Sparkling water
- 2 TBSP Honey to taste
- 2 TBSP Lime juice use more or less to taste
- 1/4 cup Fresh mint
Chips and Salsa
- 1 large Tomato quartered and stem removed
- 1 TBSP Red onion rough chopped
- 2 clove Garlic
- 1/4 tsp Lime juice to taste
- 1/2 TBSP Extra-virgin olive oil
- 1 TBSP Fresh cilantro chopped
- 1/2 Jalapeño pepper optional
- Salt to taste
- Black pepper to taste
- 2 oz Tortilla chips
Tacos
- 10 oz Ground beef
- 1/2 TBSP Taco seasoning or more if needed
- 6 Soft taco shells
- 1/2 cup Cheddar cheese shredded
- 1/2 cup Romaine lettuce shredded
- 1/2 Avocado diced
- 1/4 cup Tomatoes chopped small
- 4 TBSP Sour cream
- 2 TBSP Hot sauce optional
Instructions
- Prep all ingredients per the instructions above.
- Mojito: Stir together all ingredients until well combined. Refrigerate until ready to serve to allow the flavors to build. Taste and adjust the lime or honey as needed.
- Make the salsa: Prep salsa ingredients per the instructions above. Place all the ingredients (except the tortilla chips) in a food processor or blender and pulse until smooth. Season with salt and pepper to taste. Reserve in the fridge until you are ready to serve.
- Heat a large non-stick skillet over medium heat. Once hot, add the ground beef and taco seasoning, breaking up the beef with a wooden spoon. Cook until no longer pink. Taste and add more seasoning or salt as needed.
- Evenly distribute the beef onto the taco shells, and top with cheese, lettuce, avocado, and tomato. Fold in half.
- Serve the tacos with sour cream and hot sauce (if using), chips and salsa, and mojito.
