Ingredients

Mojito

  • 24 oz Sparkling water
  • 2 TBSP Honey to taste
  • 2 TBSP Lime juice use more or less to taste
  • 1/4 cup Fresh mint

Chips and Salsa

  • 1 large Tomato quartered and stem removed
  • 1 TBSP Red onion rough chopped
  • 2 clove Garlic
  • 1/4 tsp Lime juice to taste
  • 1/2 TBSP Extra-virgin olive oil
  • 1 TBSP Fresh cilantro chopped
  • 1/2 Jalapeño pepper optional
  • Salt to taste
  • Black pepper to taste
  • 2 oz Tortilla chips

Tacos

  • 10 oz Ground beef
  • 1/2 TBSP Taco seasoning or more if needed
  • 6 Soft taco shells
  • 1/2 cup Cheddar cheese shredded
  • 1/2 cup Romaine lettuce shredded
  • 1/2 Avocado diced
  • 1/4 cup Tomatoes chopped small
  • 4 TBSP Sour cream
  • 2 TBSP Hot sauce optional

Instructions

  • Prep all ingredients per the instructions above.
  • Mojito: Stir together all ingredients until well combined. Refrigerate until ready to serve to allow the flavors to build. Taste and adjust the lime or honey as needed.
  • Make the salsa: Prep salsa ingredients per the instructions above. Place all the ingredients (except the tortilla chips) in a food processor or blender and pulse until smooth. Season with salt and pepper to taste. Reserve in the fridge until you are ready to serve.
  • Heat a large non-stick skillet over medium heat. Once hot, add the ground beef and taco seasoning, breaking up the beef with a wooden spoon. Cook until no longer pink. Taste and add more seasoning or salt as needed.
  • Evenly distribute the beef onto the taco shells, and top with cheese, lettuce, avocado, and tomato. Fold in half.
  • Serve the tacos with sour cream and hot sauce (if using), chips and salsa, and mojito.
