Prepare the ingredients as instructed above.
Lightly season ground beef with salt, pepper, and optional spices. Portion into piles.
Toast bread slices in a toaster or in a dry pan until golden. Set aside.
Heat half of the oil in a skillet over medium heat.
Add spinach and sauté until wilted (1–2 minutes). Remove and set aside.
Increase heat to medium-high and add remaining oil. Place beef piles in the pan and smash thin with a spatula. Cook 2–3 minutes until browned and crispy, then flip.
Immediately place a slice of cheddar on each patty after flipping. Cook for another 1–2 minutes until melted and patties are cooked through.
In the same pan (lower heat to medium-low), crack eggs. Cook until whites are set but yolks remain runny. Season lightly with salt and pepper.
Assemble sandwiches: Layer the bread with smash beef patty, sautéed spinach, eggs, and top slice of bread. Cut in half if preferred.
Brew and prepare the coffee to your liking.
Serve sandwiches with cherries and pineapple and coffee.
