BBQ Pulled Chicken

Ingredients

  • 1/2 cup Chicken broth
  • 1 tsp Brown sugar
  • 1/4 tsp Chili powder
  • 1/4 tsp Garlic powder
  • 1/4 tsp Hot sauce
  • 1 tbsp Yellow mustard
  • 1 tsp Apple cider vinegar
  • 2.5 oz Chicken breast boneless skinless
  • 2 slices Crusty bread toasted
  • 1 tbsp Scallions chopped

Instructions

  • In a pot over medium heat, combine all of the ingredients (except the bread and scallions). Cover with a lid and bring to a low simmer (adjust the heat accordingly) until the chicken reaches an internal temperature of 160 degrees using a thermometer. Then remove the chicken. Continue simmering the sauce without a lid.
  • Using 2 forks pull the chicken apart into shreds. Then place back into the pot. Season with salt and pepper to taste.
  • Garnish with scallions, serve with bread.
