In a pot over medium heat, combine all of the ingredients (except the bread and scallions). Cover with a lid and bring to a low simmer (adjust the heat accordingly) until the chicken reaches an internal temperature of 160 degrees using a thermometer. Then remove the chicken. Continue simmering the sauce without a lid.
Using 2 forks pull the chicken apart into shreds. Then place back into the pot. Season with salt and pepper to taste.
