In a mixing bowl, mash the half the banana until smooth.
In the same bowl, add the flour, sugar, baking powder, salt, milk, and egg.
Stir the mixture until well combined and there are no large lumps. The batter should be smooth but slightly thick.
Heat a skillet or frying pan over medium heat and add a small amount of butter or oil to coat the surface.
Once the skillet is hot, pour a ladleful of pancake batter onto the skillet, using about 1/4 cup of batter for each pancake.
Cook the pancakes for 2-3 minutes on one side, or until bubbles form on the surface.
Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed.
Serve the banana pancakes warm, top with sliced banana and drizzled with maple syrup or honey if desired and a glass of milk.
