Preheat the oven to 400 degrees. Place the sausage links on a baking sheet and cook to an internal temperature of 150 degrees using a thermometer and nicely browned.
Place the coconut in a saucepan on medium heat. Saute until light golden brown. Remove from the pan and set aside.
Add the butter, bananas, walnuts, raisins, sugar, and cinnamon to the saucepan. Cook over low-medium heat, then stir in the vanilla, oats, and milk. Continue to cook the oatmeal according to the instructions on the package.
Portion the oatmeal, top with reserved banana slices, toasted coconut, and creme fraiche, serve with sausage.
