Ingredients

  • 8 oz Breakfast sausage links
  • 1/4 cup Shredded coconut
  • 2 tbsp Butter
  • 3 Banana peeled and sliced, reserve some for garnish
  • 1/2 cup Walnuts roughly chopped
  • 1/2 cup Raisins
  • 2 tbsp Brown sugar
  • 1 tsp Ground cinnamon
  • 1/2 tsp Vanilla extract
  • 1 cup Rolled oats
  • 2 cups Milk
  • 4 tsp Creme Fraiche

Instructions

  • Preheat the oven to 400 degrees. Place the sausage links on a baking sheet and cook to an internal temperature of 150 degrees using a thermometer and nicely browned.
  • Place the coconut in a saucepan on medium heat. Saute until light golden brown. Remove from the pan and set aside.
  • Add the butter, bananas, walnuts, raisins, sugar, and cinnamon to the saucepan. Cook over low-medium heat, then stir in the vanilla, oats, and milk. Continue to cook the oatmeal according to the instructions on the package.
  • Portion the oatmeal, top with reserved banana slices, toasted coconut, and creme fraiche, serve with sausage.
