Bacon and Eggs

Ingredients

  • 4 slices Bacon
  • 2 tsp Extra-virgin olive oil
  • 4 Eggs
  • 2 slices Sourdough bread toasted and buttered if desired (or bread of your choice)
  • 4 tsp Triple berry jam

Instructions

  • Place the bacon in a nonstick pan on medium heat. Cook until the bacon is golden brown and crisp on both sides. Remove onto paper towels to drain excess grease.
  • Heat a nonstick pan on medium heat. Once hot, add the oil. Crack in the eggs. Cook until the whites of the eggs are firm and yolk is soft. (Cover with a lid and add 1 to 2 tablespoons of water to help cook the whites of the eggs. Season with salt and pepper.
  • Serve the eggs with bacon. Season with salt and pepper. Serve with toast and jam.
