Avocado Havarti Sandwich

4 Slices Sourdough bread toasted 1 tbsp Mayonnaise 1 tbsp Yellow mustard 1/2 cup Spring mix 4 slices Tomato 4 slices Havarti Cheese 1 Avocados pitted and sliced 1 tbsp Extra-virgin olive oil plus some for drizzling 2 tbsp Red onion shaved 1/4 tsp Dried oregano 2 oz Potato chips 2 Pickle spears
Toast the bread then spread mayo and mustard on each slice. Layer with spring mix, tomato, cheese, avocado slices drizzled with oil and seasoned with salt pepper, onion, and oregano.
Cut in half and serve with chips and pickle.
