Arugula Salad w/ Shaved Parmesan

- 4 tbsp Gold raisins
- 4 tbsp Parmesan cheese shaved or shredded
- 3 tbsp Red onion sliced thin
- 4 tbsp Extra-virgin olive oil
- 2 tbsp Apple cider vinegar
- 1 tsp Dijon mustard
Whisk together the oil, vinegar, and mustard.
Place a bed of arugula on a plate with raisins, parmesan, and onion on top and dress the salad right before serving.
