Ingredients

  • 4 cups Arugula rinsed and dried
  • 4 tbsp Gold raisins
  • 4 tbsp Parmesan cheese shaved or shredded
  • 3 tbsp Red onion sliced thin
  • 4 tbsp Extra-virgin olive oil
  • 2 tbsp Apple cider vinegar
  • 1 tsp Dijon mustard

Instructions

  • Whisk together the oil, vinegar, and mustard.
  • Place a bed of arugula on a plate with raisins, parmesan, and onion on top and dress the salad right before serving.
