Arugula Goat Cheese Salad

- 4 cups Arugula
- 1 cup Grape tomatoes halved
- 3 tbsp Red onion sliced paper thin
- 4 tsp Pine nuts
- 4 tbsp Goat cheese
- 4 tbsp Extra-virgin olive oil
- 2 tbsp Red wine vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp Dried oregano
On a bed of arugula place the tomatoes, onions, pine nuts, and goat cheese. Season with a pinch of salt.
In a bowl, whisk together the oil, vinegar, mustard, oregano, and season with salt and pepper.
Dress the salad before serving.
