Apple-Manchengo Panini

Ingredients

Panini

  • ¼ cup Fig preserves or jam
  • 4 slices Crusty bread
  • 4 oz Manchego cheese sliced
  • 1 Apple sliced
  • ¼ cup Arugula
  • 2 TBSP Butter
  • 2 oz Potato chips
  • 2 Pickle spears

Lemon Sparkling Water

  • 24 oz Sparkling water cold
  • 1 Lemon sliced

Instructions

  • Heat the panini press or pan over medium heat.
  • Assemble sandwich: Spread fig jam onto one side of each slice of bread evenly. Layer with cheese, apple slices and arugula onto half the bread slices, use the other bread slices to top the sandwich. Spread butter onto the outside of each slice of bread.
  • Place sandwiches in the panini press and heat until the outside is crisp and the cheese is melted.
  • Mix the sparkling water and lemon.
  • Serve the panini with chips, pickle, and lemon sparkling water over ice if desired.
