Gather and prep all ingredients per the instructions above.
In a pan over medium heat add the butter, sugar, apples, and cinnamon. Cook until the apples are tender. Then set aside.
Combine Dry Ingredients: In a medium bowl, mix the oats, pancake mix, baking powder, and salt.
Mix Wet Ingredients: In another bowl, whisk together the milk, egg, maple syrup, and vanilla extract.
Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined.
Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Add a little butter or oil to coat the surface.
Cook the Pancakes: Pour about ¼ cup of the batter onto the skillet for each pancake. Cook for 3 - 4 minutes, or until bubbles form on the surface. Flip and cook for an additional 2 - 3 minutes until golden brown.
Serve: Stack the pancakes on plates, top with apples, and serve with a glass of milk on the side.
