Ingredients

Parfait

  • 1 cup Blueberries plus more for garnish
  • 1 cup Blackberries plus more for garnish
  • 1 cup Raspberries plus more for garnish
  • ¼ cup Water
  • ¼ cup Granulated sugar
  • pinch Salt
  • 2 tsp Lemon zest freshly grated
  • ½ cup Granola divided
  • 2 cups Yogurt your choice of flavors

Coffee

  • Coffee
  • Your choice of sweetener
  • Your choice of creamer

Instructions

  • Make the Berry Compote for the Parfaits: Combine berries, water, sugar, and salt in a small saucepan. Heat over medium heat until berries begin to break down and a spoon or spatula leaves a clear path on the bottom of your pot, 8 - 10 minutes. Remove from heat, stir in lemon zest, and let cool for 10 minutes.
  • Build your Parfaits: Layer the glass or bowl with granola, yogurt, and compote, alternating between layers.
  • Garnish: Top with fresh berries and granola.
  • Prepare the Coffee: Brew and prepare the coffee to your liking.
  • Serve: Serve the parfait with coffee and enjoy.
