- 1 cup Blueberries plus more for garnish
- 1 cup Blackberries plus more for garnish
- 1 cup Raspberries plus more for garnish
- ¼ cup Water
- ¼ cup Granulated sugar
- pinch Salt
- 2 tsp Lemon zest freshly grated
- ½ cup Granola divided
- 2 cups Yogurt your choice of flavors
Coffee
- Coffee
- Your choice of sweetener
- Your choice of creamer
Instructions
- Make the Berry Compote for the Parfaits: Combine berries, water, sugar, and salt in a small saucepan. Heat over medium heat until berries begin to break down and a spoon or spatula leaves a clear path on the bottom of your pot, 8 - 10 minutes. Remove from heat, stir in lemon zest, and let cool for 10 minutes.
- Build your Parfaits: Layer the glass or bowl with granola, yogurt, and compote, alternating between layers.
- Garnish: Top with fresh berries and granola.
- Prepare the Coffee: Brew and prepare the coffee to your liking.
- Serve: Serve the parfait with coffee and enjoy.
