In a small bowl, mix together Greek yogurt and 2 TBSP honey (or maple syrup) until well combined.
In two serving glasses or bowls, layer the yogurt mixture, granola, and mixed fresh fruits, repeating the layers until the glasses are filled. Drizzle the remaining honey or maple syrup over the top of the parfaits.
Set aside the fruit and yogurt parfaits.
Boil the hot water.
Place one tea bag in each serving mug and pour hot water over them. Let steep for 3-5 minutes.
Once the tea has steeped, remove the tea bags and discard them.
Stir in sweetened condensed milk to taste into each mug of hot tea, until desired sweetness is achieved. Stir in vanilla.
Serve the hot vanilla bean tea alongside the fruit and yogurt parfaits.
