Ingredients

Yogurt Pots

  • ½ cup Strawberries for coulis
  • 1 TBSP Sugar for coulis
  • ¼ tsp Lemon juice for coulis
  • 1 cup Plain Greek yogurt or your choice
  • 1 TBSP Honey optional
  • ½ cup Fresh fruit such as berries banana or kiwi
  • ½ cup Granola

Coffee

  • Coffee
  • Your choice of sweetener
  • Your choice of creamer

Instructions

  • Prepare the Strawberry Coulis: In a small saucepan, combine the strawberries and sugar. Cook over medium heat for 3–4 minutes, stirring occasionally, until the strawberries soften and release their juices. Mash the strawberries with a fork or blend for a smoother texture. Stir in the lemon juice. Let the coulis cool to room temperature.
  • Prepare the Yogurt Mixture:In a small bowl, mix the Greek yogurt with honey (if desired) until smooth. Adjust the honey to taste.
  • Assemble the Yogurt Pots: Divide the yogurt evenly between two serving glasses or bowls. Layer with fresh fruit: Top the yogurt with your choice of mixed fresh fruit, such as berries, banana slices, or kiwi. Add granola: Sprinkle granola generously over the fruit and yogurt. Drizzle with coulis: Add the cooled strawberry coulis on top for a sweet, tangy finish.
  • Brew the Coffee: While assembling the yogurt pots, brew your favorite coffee using your preferred method. Sweeten and add creamer if desired.
  • Serve: Serve the chilled yogurt pots alongside freshly brewed coffee. Enjoy!
